Rach's August Challenge: Lemon

This month I made my brother's favorite dessert, lemon bars. I had never made them before, but they sounded great. Our camera crashed, so even though I took pictures, I don't have any to upload. I'm hoping it is a bad box of batteries and that we don't have to replace the whole camera.

Lemon Bars
Betty Crocker's Cookbook, 2000

Ingredients:
1 c. all-purpose flour
1/2 c. butter or margarine, softened
1/4 c. powdered sugar
1 c. granulated sugar
2 tsp. grated lemon peel
2 Tbsp. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
2 large eggs
Powdered sugar (for dusting)

Directions:
1. Heat oven to 350 degrees
2. Mix flour, butter, and 1.4 c. powdered sugar. Press into ungreased 8"x8"x2" or 9"x9"x2" pan, building up 1/2 inch edges.
3. Bake crust 20 minutes, remove from oven.
4. Beat remaining ingredients except powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
5. Bake 25-30 minutes or until no indentation remains when lightly touched in the center. Cool in the pan on wire rack. Dust with powdered sugar. For bars into 5 rows by 5 rows.

The crust was great, it would be good for a fruit pizza. Although I would probably add just a little more powdered sugar.

The actual bars needed just a little more lemon flavor. I used fresh lemon juice. Next time I may add just a bit of lemon extract. Also, I double the recipe, so it took a lot longer to bake, but it still turned out well. I really can't wait to try this again.

I found a great recipe for Lemon Bars over on Bakerella's blog that has a great lemon taste (if you are interested). I am visiting from Lissaloo's blog - good luck with the cake decorating! Wish I had the patience for it! :)
