Pretty in Pink



One of my best friends is expecting a little girl 3 weeks before me. Her shower was this weekend and I got to make the cakes. I used a design from Peggy Porschen's Pretty Party Cakes. Her design was for mini-cakes, instead I made 3, 3-layer 6" cakes.

One cake was toffee with white chocolate icing, one was vanilla with raspberry buttercream filling and vanilla icing, one was peppermint with peppermint icing. I labeled each of the plates with the flavor. The stripes are royal icing. The roses are gumpaste, my first.

An hour and a half before I needed to leave for the shower I thought I was only going to show up with 2 cakes. I attempted to make a white chocolate ganache using the same ratios of chocolate and whipping cream as I would with milk chocolate. I ended up with a soupy mess! After a last minute run to the store for more white chocolate I managed to save the icing. I melted more white icing, stirred it into the soup, then added that to some creamed butter. I then added powdered sugar until the consistency was correct. It resulted in a delicious icing. Usually I like to follow recipes to the letter so I was pretty happy with the results.

This past weekend I made 4 cakes (the purple bridal shower cake and these), I was worn out! I don't have any more cakes on my calendar until next May, but I always seem to end up with one or two a month.
